Better Than Usual Cooked Greens

Most people don’t like cooked greens because they have such a vinegar taste. This recipe still uses vinegar (needed for cooked greens) but adds other ingredients to make them delicious.

Ingredients

Scale
  • 5 strips chopped bacon, browned
  • 2/3 cup water
  • 1/3 cup vinegar
  • 1/2 teaspoon salt
  • 1/3 cup brown sugar
  • collard greens
  • kale
  • turnip greens
  • mustard greens

Instructions

  1. You will need enough greens to fill/pack a 4 quart pot. You can used any combination of these but make sure one of them is collard greens.
  2. Brown 5 strips chopped bacon in 4 quart pot.
  3. Add water, vinegar, salt and brown sugar. Bring to a boil
  4. Add cut up greens (stems removed) packed to fill pot, reduce to a simmer, cover, and cook until greens are tender. Watch to keep from burning.

Notes

If you are cooking only Collard greens cut out the toughest veins. They may need a little more liquid and may need to cook a little longer.
