Ingredients

Scale
  • 1 Bottle Vodka (any brand)
  • 1 Vanilla Bean per 2 oz. Vodka
  • OR
  • 2 Organic Lemon Peels per 1 cup Vodka
  • 2 ounce Amber colored bottles

Instructions

  1. For Vanilla Extract:
    For each 2 ounce bottle split one vanilla bean and insert into bottle. You will probably have to bend it in half. Fill bottle with Vodka. Seal with lid. Let sit for at least 2 -3 months. Shake about once a week. The bean sediment is part of the processing so don’t worry about seeing it. You can leave the beans in even once you start using it.
  2. For Lemon Extract:
    In a large Mason type jar (a jar with a good seal) peel the lemons, keeping the white part of the peel out. (I used a grater). You can have the peel in chunky pieces or strings). Put the peel in the jar and pour vodka over. (1 cup of vodka per the peels of 2 lemons). Let sit for at least 2 months, shaking at least once a week. Store in a dark place (pantry). Strain and pour in 2 ounce Amber bottles.
