Whenever my brother and I had friends over to spend the night our mom always made this recipe with burgers. The next day our friends’ moms would call mom in shock that she got their kids to eat spinach! This recipe is so full of delicious cheese you forget you are eating spinach. This is another recipe you can use fat free cream cheese and parmesan cheese to cut calories.

Ingredients

Scale
  • 2 10 ounce boxes frozen chopped spinach
  • 1/2 8 ounce cream cheese (softened)
  • 1 stick butter (softened)
  • salt (to taste)
  • 1 pinch nutmet
  • freshly grated parmesan cheese

Instructions

  1. Cook spinach according to the package directions, either in water or in the microwave.
  2. Drain spinach thoroughly and combine with cream cheese, butter, salt (if not cooked with spinach), nutmeg, and some of the parmesan cheese.
  3. Pour into a 1 1/2 (1.5) quart baking dish and top heavily with parmesan cheese.
  4. Bake until spinach bubbles and cheese browns in a 350° to 400° oven.
